Floating Noodles

I follow a lot of foodie Instagram accounts. Too many actually... so I'm always left feeling hungry when I'm scrolling through my IG feed. When I saw The Episodic Eater (@theepisodiceater) post about "Floating Noodles" at the Neptunes Raw Bar, I knew I had try for myself. How are these noodles floating?!
